Wash and cut kale off of the center vein (I don't always do this but it will make your kale more tender if you do). Cut or rip your kale into bite-sized pieces. Drizzle with olive oil and add some salt and a dash of lemon juice or vinegar then, just as the name implies, massage it with your clean hands! The greens need to be covered in oil, the coarseness of the salt will help and the acidity in the citrus or vinegar will break the cell walls of the kale, making it juicy and digestible. The kale will change color and get very tender as you massage it. Add anything else you want to your salad, I love it with carrots or apples (something crunchy and sweet) and feta cheese. Add some cooked grains and/or nuts for a complete meal.
